Festive Carrot Layer Cake


I have a confession to make, I love carrot cake. I can't resist having carrot cake around me and not eating it. I have to tell you that, years ago, when we were visiting my in-laws, I would escaped from the house, pretending I was going for a walk and actually walk (so I was not lying too much) to the bakery store and devoured a piece of carrot cake. They were making the best carrot cake ever. But it's was loaded with oil. So I searched for recipes and after trials & errors finally found a low-fat version that I love. One day I made one and brought it to work. The guys were eating it at breaks, lunch hour and before going home. So I kept the recipe and have been making this one for years now. The cake texture is not as fluffy as a cake with 1 1/2 cups of oil. This one uses only 1/4 cup and the fat in the recipe is the yogourt. Also since you need liquid you use pineapples in their juices. You can frost the cake with your favorite cream cheese topping. Et voilà! you have a delicious low-fat carrot cake.

J'ai une confession à faire, j'aime le gâteau aux carottes. Je ne peux pas résister lorsqu'il y a du gâteau aux carottes dans la maison. Il y a quelques années, quand nous rendions visite à ma belle-famille, je prétendais aller faire une marche et je me rendais à la pâtisserie du coin. Il y avait le meilleur gâteau aux carottes. Malheureusement ce gâteau était fait avec beaucoup d'huile. Donc j'ai recherché des recettes et après plusieurs essaies j'ai finalement trouvé une version à faible teneur en matières grasses que j'aime. Un jour j'ai fait un gâteau et je l'ai apporté au bureau ou je travaillais. Les employés en mangeait durant la pause, pendant l'heure du diner et avant de partir à la fin de la journée. Depuis ce temps j'ai adopté la recette et c'est celle-ci que je fais depuis des années. La texture de gâteau n'est pas aussi moelleuse qu'un gâteau avec 1 1/2 tasse d'huile. Celui-ci utilise seulement 1/4 tasse d'huile pour réduire le gras l'ont utilise du yogourt. Également puisque nous avons besoin de plus de liquide nous employons des ananas dans leur jus. Vous pouvez glacer le gâteau avec votre recette de glaçage à la crème préféré. Et voilà ! vous avez un gâteau de carotte à faible teneur en matières grasses et délicieux.

  8. I was put off by the idea of carrot cake as a child and I don't know if I've ever given it a fair chance since then. I could certainly go for a piece now though--yours looks delicious!

  18. Your cake looks amazing. It's so light colored, which I don't see often with carrot cake (probably because other people overuse brown sugar). Also, it looks so light and fluffy as opposed to oil drenched link many other's carrot cakes. I might have to give your recipe a try =)
