When we entertain it's important to have good company, a great platter of cheeses, good wine & excellent crackers. Our favorites are the Raincoast Crisps but they are pricey at $7.00 a small box. They are addictive. After doing a search I've found a great recipe on Dinner with Julie's blog.
Who would have think that those delicious crackers would be so easy to make. They require two bakings like biscottis. The key is to slice them really thin to obtain that crispiness. It's best done if you freeze the loaf of bread after the first baking. If you don't have honey at home you can use pure maple syrup, like I did. These crackers are good served with cheeses & a good Red Pepper Jelly. It's so much fun to entertain when you have good quality food.

I've never tried Raincoast Crisps but I have had (and loved) something similar from a local bakery (Terra Breads). I figured I could make them at home but wasn't sure how to go about it. Thanks so much for posting the recipe! They look awesome. One question - so you slice the loaf when it's frozen?

I was seriously about to add these crackers to my grocery list before I read that you found the recipe for them! I can't wait to try the recipe out. The crackers certainly look delicious. I'm with you, Raincoast Crisps, while delicious, are outrageously expensive!!! A friend of mine attempted to make them herself, but they came out quite hard because she didn't freeze the loaf to slice them thinly. I'll give her your tip!

ReplyDeleteI adore Raincoast crips , too, but they're so expensive. I found a recipe for similar crisps with pistachios in a cookbooks I have on pates and terrines and I'm going to make them in the next couple of days. I'll let you know how they turn out. Thanks for posting this recipe.
