I have been a member of the Cooking Light message board for more than 9 years. Over the years I have also been reading their magazine. I have read about this recipe, on the board, and knew I had to try it. This asian version is quite different from my pork roast. We enjoyed the flavors, for a change. I served this roast with mashed potatoes, glazed carrots & a salad.

With the leftovers I shredded the roast and I made sandwiches. They were so good. You can even freeze the shredded meat and enjoy a sandwich later.

Awards!

Two weeks ago we lost a friend in the tragic Cougar Helicopter crash in St. John's. Tim was the co-pilot. He got out of the forces at the same time as my husband and they went to the same helicopter course in West Palm Beach. That's where I met Tim. What a nice charming men. He had four beautiful kids that he was proud of. Did not see them often, because they were living in a different province with their mom. He was only 47 years old. Tomorrow we will go to his funeral in our town.

Since two weeks what kept me going was reading your blogs. It helped me go thru my days. Weeks ago I received two awards. I would love to pass the awards to everyone in the blogging community but will play by the rules:

Triple Chocolate Cupcakes with See's Candies

Triple Chocolate Cupcakes



Easter is in three weeks. I received some chocolates from See's Candies and I was inspired to create these Triple Chocolate Cupcakes that I will be serving my family for dessert.

I decided to decorated them with their Little Pops. Then I used their Extra Dark Chocolate and made a Ganache to finish the cupcakes.

The cupcakes are delicious. I should hide them before the boys eat them all.

I love See's Candies. They taste so good and are among the finest. They have been in business since 1921 when the company was founded in California.

Toffee Squares

It's been a while since I could access Blogger. Kevin from Closet Cooking was a big help in helping me how to be able to post again. I'm still having problems login to blogger and hopefully they will fix it soon.

I just came back from a week vacation in Ottawa and Quebec. Visited my daughter and my family. We had a good time. It's always nice to visit them. I'm back on Vancouver Island and already miss them. We are considering moving East, in the summer, to be closer to the family.

Before going on Holiday I make a treat. Those are so good. I wanted to eat the whole pan.
