Pear & Raspberry Crisp Gluten-Free - Croustade aux poires et framboises sans gluten



During the Holidays I bought a bag of rice flour to make a brownie dessert for my brother-in-law.  Since I had some rice flour left I needed to find a way to use it.  If often find myself craving a sweet treat after Dinner and last night decided to tweak my mom's recipe for her old-fashioned apple crisp and make a Pear & Raspberry Crisp Gluten-Free using the rice flour instead of the all-purpose flour for the topping.  She used brown sugar in her recipe and I replaced it with real maple syrup.  It turned out to be an excellent fruit dessert.  This is really good served at room temperature with a scoop of vanilla ice cream.  If you want to cut calories try it with vanilla yogurt.  Even if I used the rice flour instead of the ap flour I need not noticed a change in the taste.  When making this crisp use any fruits that you have.  For the oats make sure you buy certified gluten-free like Bob's Red Mill.


Pendant la période des fêtes j'ai acheté un sac de farine de riz pour faire des brownies pour mon beau-frère.  Je voulais utiliser cette farine pour faire d'autres desserts.  Après le souper j'ai souvent une petite envie de sucré.  J'ai décidé de changer la recette de ma mère de croustade aux pommes en utilisant de la farine de riz à la place de la farine tout-usage dans le mélange pour la croustade.  J'ai remplacé la cassonade par du sirop d'érable.  Cela a donné de bons résultats.  Ce dessert est très bon servi à température pièce avec une boule de glace à la vanille ou un yogourt à la vanille.  Je n'ai pas remarqué de différence dans le goût de la croustade en utilisant la farine de riz.  Vous pouvez utiliser les fruits que vous avez en main pour faire ce dessert.  Il faut acheté des flocons d'avoine sans gluten comme Bob's Red Mill pour que la recette soit certifiée sans gluten.


Pear & Raspberry Crisp Gluten-Free

3 cups fruits, peeled and cut in slices
¾ cup Rice Flour
¾ cup Rolled Oats, Gluten-Free
1 tsp cinnamon
1 tsp nutmeg
¼ tsp salt
½ cup butter, melted
¾ cup maple syrup or brown sugar

Place the fruits in a 13x9 baking pan.

Mix in with the fruits ¼ cup maple syrup.

In a bowl mix the melted butter with the rice flour, the oats, cinnamon, nutmeg, salt, and the ½ cup maple syrup remaining.  Spread over the fruits.

Bake at 350F for 30 minutes.  Let rest for 15 minutes before serving.

Croustade aux poires et framboises sans gluten

3 tasses de fruits pelés, coupés en tranches
3/4 tasse de farine de riz
3/4 tasse de flocons d’avoine, certifiés sans gluten
1 c. thé de cannelle
3/4 thé de muscade
1/4 thé de sel
1/2 tasse de beurre fondu
3/4 tasse de sirop d’érable ou cassonade

Mettre les fruits dans un plat de 13x9.

Arroser les fruits de ¼ tasse de sirop d’érable. Bien mélanger.

Dans un bol mélanger le beurre fondu, la farine de riz, les flocons d’avoine, la cannelle, la muscade, le sel et ½ tasse de sirop d’érable.  Bien étendre sur les fruits.

Cuire au four à 350F pendant environ 30 minutes.  Reposer 15 minutes avant de servir.
