It's that time of the year to start using the Crock Pot. I like to have a meal ready when my son come's back from the arena. This recipe takes a bit of time to prepare but it is worth the efforts. If you work I would not prepare this recipe during the week. This recipe uses white wine and I have read that you should use a good wine that will like to drink with your meal. If you don't drink wine I would substitute the wine for chicken broth. For garnish it is suggested to serve with fresh Tarragon. Some of you may not like Tarragon which has a gentle combination of licorice and basil taste. Just leave it out. I find that it complements well the dish with the earthy mushroom sauce. This meal can be prepare one day ahead. The flavors will develop overnight.

Well this looks simply delectable. Rich and flavorful and the chicken looks perfectly moist and cooked. I love pairing tarragon with chicken and adding that wine just took things up a notch! amazing!

This looks wonderful. I grow tarragon in herb pots and it manages to make it through the winter when I bring it indoors, so I have fresh tarragon all year. This looks like a perfect use for it, thanks for the recipe. Love the crockpot...it's like having a personal chef cook for you when you are out.
