It's Super Bowl w-end! Grilled Pepper Poppers

It's Super Bowl week-end! Lot's of you are still searching for a last minute appetizer to bring to parties. We made these in 2009 and they were a success. This is the original picture that my son took at the time. He did a great job! 


This week-end my brother is coming from Beloeil, Québec to visit us with his girlfriend. We have plans to go play hockey to an outside rink, drink lot's of wine and eat great food. We always have fun we family members visit us. It is nice to spend quality time with them.

Grilled Pepper Poppers
Adapted from Cooking Light

4 ounces soft goat cheese
4 ounces light cream cheese, softened
2 ounces grated fresh Parmesan cheese
1/2 cup tomatoes, chopped finely
2 Tbsps green onions, sliced
2 Tbsps fresh sage, chopped
1/2 tsp salt
16 jalapeño peppers, halved lengthwise and seeded
Cilantro

Start oven at Broil.

In a bowl mix all ingredients except the peppers.

Spoon 2 teaspoon of the mix inside each pepper halves.

Spray a cookie sheet with Pam. Place jalapeños on the cookie sheet.

Broil for about 4 minutes. If not enough broil to your liking add 1 minute.

Sprinkle cilantro on top.
