Already February and Valentine Day is coming. It seems I have not seen January, it went so fast. Before Christmas Kraft Canada contacted about doing a photo shoot in my home, while I was baking. I was so excited about this project since I have never done a photo shoot before. We were scheduled to do it on December 21st but Ottawa was hit by a big snow storm. After contacting the photographer we decided to do it in January. The photo shoot took place in my home. For the occasion I choose to make a recipe that I have never done before, Rocky Ridge Bark. It was my first time making a bark and not the last. It is so quick to make and delicious. I like that you can use any chocolate and you can substitute all the ingredients for others that you prefer. The bark will keep a long time in a cool place.

This would be nice to offer to someone special on Valentine Day using white chocolate, cranberries, pecans or pistachios.

Rocky Ridge Bark


what you need

2 pkg. (225 g each) Baker's Semi-Sweet Chocolate, melted
1/2 cup chopped dry-roasted peanuts
Oreo Cookies, coarsely chopped
1/2 cup Jet-Puffed Miniature Marshmallows



make it



COMBINE ingredients.

SPREAD onto parchment- or waxed paper-covered baking sheet.

REFRIGERATE 1 hour or until firm. Break into 20 pieces.

S'more Bark
Prepare as directed, substituting 1/2 cup chopped Honey Maid Graham Wafers for the peanuts and chopped cookies.
Make It Special
For a fun gift idea, fill a festive mug with the bark, then wrap in cellophane and tie with a colourful holiday ribbon.
How to Store
Store in tightly covered container at room temperature.
