Even with the warm weather I have been baking. We had a lot of ripped bananas and even if I try different recipes to use our bananas my favorite will always be a Banana Load. This one is very good and made with Crosby's molasses. I am very satisfy with the results and did freeze some to take camping with us. It is so good in the morning with our fresh coffee.

Decadent Banana Loaf
3 Tbsp butter
3/4 cup sugar (I reduced the sugar to 1/2 cup)
3 overripe bananas
2 Tbsp Crosby's Fancy Molasses
1 3/4 cups flour
1 tsp baking soda
1 tsp baking powder
3/4 cups walnuts or pecans chopped
1/2 cup chocolate or peanut butter chips (optional - I used dark chocolate)
Preheat oven to 350F. Line a 8x4 in. loaf pan with parchment paper or spray with Pam.
Cream butter and sugar, mix in bananas, molasses and eggs until smooth.
Mix together flour, baking soda and baking powder. Add to wet ingredients and beat until smooth.
Gently fold in nuts, if using and chocolate chips.
Pour batter into a 8x4 in. loaf pan and bake at 350F for 1 hour or until done.
