It's the last day before school starts in Ontario. Some of you might be excited that your kids are going back to school and some might be sad. For me I always liked to spend the summer with my children, we enjoyed a more relaxed schedule, so it was not easy to see them going back to school in September.
One thing that some of you are fearing right now is making lunches again. Kids love to have a variety of food in their box lunches and mine always liked when I did prepare their sandwiches with tortillas. If your kids are bored with their daily sandwiches try using different filling in tortillas. They are so versatile. When making them the night before, make sure you do cover the entire tortilla with lettuce before filling it. That way your tortilla will not become soggy.
To make my Chicken Ceasar Salad Wrap with Bacon I was inspired by Chef Ron. He was the Chef in the RCMP kitchen where I worked. Once a week he would do Chicken Wraps. I always made sure I was in line early at lunch time to get my tortilla before they ran out. One day I asked how he made them and I did re-create a similar recipe that you can find below.

Chicken Caesar Salad Wrap with Bacon Recipe
2 cups rotisserie chicken cut into cubes
1 tomato, diced
2 green onions, sliced
2 slices of bacon
2 Tbsps croutons
2 Tbsps Ceasar dressing
In a bowl mix all ingredients. Cover one tortilla with lettuce. Add filling in the middle on the tortilla. Fold two sides of tortilla over filling, then roll tightly, ending seam side down. Cover with plastic wrap. Refrigerate until ready to eat.
