Why not start the New Year right and do meal planning. It is a challenge if you have a busy schedule. Since I work from home, I can plan my meals at the last minute, but when I was working it was a different story. If you want to make sure that your family eats a homemade meal every nights of the week, you need a plan. There are many sites that can help you plan by sending a menu once a week, with recipes and a grocery list.
Today I had beef in the fridge and went in my stack of sauces jars and picked a Creamy Coconut and Peanut Sauce. I looked in the fridge and found cauliflower and red pepper. In a couple of minutes, I had planned my dinner. My son called from the arena and said that he was starving. It took him 30 minutes to get home and his meal was ready. This dish was served with basmati rice. The sauce is very mild, and my son added some spiciness to his liking.
Beef with Cream Coconut and Peanut Sauce
500 grams beef cut into 1 in. cubes
30 ml olive oil
1 jars Coconut and Peanut Sauce
1/2 head of cauliflower cut into florets
1 red pepper, sliced
Cilantro to taste
Peanuts to taste
1- Sauté the beef into 30 ml of olive oil for 5 minutes. Add the cauliflower, red pepper and the jar of Coconut and Peanut sauce. Bring to a boil and simmer for 30 minutes.
2- Serve with rice cilantro and peanuts.
