If you are looking for a dessert for Valentine's Day, make this Chocolate Bourbon Cake. Don't hesitate one minute, it is simply delicious. You will not stop eating it. I had to hide some in the freezer because on the kitchen counter it was to tempting. This cake is moist like a torte. You can replace the flour with rice flour for a gluten-free version and it will be as good!
Serve this cake with whipped cream and fresh raspberries, you can indulge on Valentine Day.
THE CANADIAN FOOD EXPERIENCE PROJECT:
This month for The Canadian Food Experience Project the Challenge is: My Canadian Love Affair. Canada is a beautiful country from Coast to Coast. I had the chance to live in seven provinces. My favorite province is British Columbia. It was nice to wake up in the morning and look at the mountains from my kitchen windows. I miss taking long walks on the beach and looking at massive trees.
Another province that I really enjoyed was Alberta. We lived in Edmonton for two years. It's the city where my daughter was born. When she was only three weeks old we took her on a trip to Banff. I still remember the magnificent stunning views of Lake Louise.
If you asked me which city if the most beautiful in Canada? My answer is Quebec City. If you have the chance to visit, Old Quebec City is not to be missed. It is a UNESCO World Heritage Site and it is surrounded by beautiful landscapes. Quebec City is the only North American fortified city north of Mexico whose walls still exist.
After travelling from Coast to Coast I can say that Canada is a beautiful country. For many years we camped in PEI. If you go, find a campground by the beach and enjoy the smooth warm sand and the views of the red sandstone cliffs. If you are travelling to Nova Scotia, Cape Breton should be on top of your list. And don't forget a visit to the Fortress of Louisbourg National Historic site. It is the largest reconstruction of its kind in North America.
Chocolate Bourbon Cake
4 oz butter, cut into small pieces
5 1/2 oz Green & Black's Organic Dark 70% Chocolate, finely chopped
1/4 cup granulated sugar
4 tbsp all-purpose flour or rice flour for gluten-free version
pinch of salt
3 large eggs
1/2 tbsp high quality bourbon
1/4 cup dark brown sugar
whipped cream, to serve
1- Position a rack in the top third of the oven and preheat at 350F.
2- Butter a 8-in round pan, 2 in deep.
3- Melt the butter and chocolate in microwave. When melted wish in the sugar and brown sugar and let rest at room temperature about 15 minutes.
4- Add to the chocolate mix the eggs, one by one, and whisk well.
5- Whisk in the bourbon. Pour the batter into the pan. Smooth the top. Bake 25 minutes.
6- Place on a wire rack and let cool completely at room temperature. You can unmold the cake onto a plate or cut pieces from the pan. Serve with whipped cream.
Serve 8 to 10.
