We had a week-end of festivities. Saturday night we hosted friends that we have not seen in a while, and Sunday it was my son's birthday. When we have two events the same week-end I need to plan ahead. Some items on my shopping list can be bought the week before the party like wine, napkins, decorations.
When the big day comes we like to spend most of the evening with our guests instead of being in the kitchen. I try to decide of a menu that I can prep in the morning, or the night before, to have less work to do when guests arrive. Vegetables and salads can be washed and place in the fridge until it is time to serve them. If we have potatoes I usually peel them and place them in cold water until ready to cook.
Some meat are tastier if you marinate them overnight like this Tandoori Chicken. If you want to entertain and add a Little Bit of India, your guest will like this tender chicken. It is simple to prepare because you only need to place the chicken in a mix of plain yogurt and Tandoori Curry Paste. I like to serve it with a mango salsa. This dish was well received.
TANDOORI CHICKEN WITH MANGO SALSA
120 ml Tandoori Curry Paste
90 ml plain yogurt
8 pieces chicken, (thighs, wings, breasts or drums)
1 mango, diced
juice of 1/2 lime
1- Place Tandoori Curry Paste, yogurt and chicken pieces in a bowl. Mix well and marinate overnight in the refrigerator.
2- Preheat oven to 350F.
3- When you are ready to cook the chicken, take out of the refrigerator and place on a roasting pan lined with foil.
4- Bake until chicken is cooked.
5- Meanwhile place diced mango and the juice of 1/2 lime in a bowl. Mix well.
6- When the chicken pieces are cooked take out of the oven and serve with the mango salsa. Decorate the chicken and salsa with fresh cilantro. Serves 4.
