I keep a bag of butterscotch chips in the cupboards to use in my baked goods. If I feel like it I might add some butterscotch chips to my banana bread recipe. My sister was hosting New Year's Eve this year. It was a potluck and I offered to bring dessert. I prepared different kind of bars and I am sharing these Tiger Bars with you today. If you have not made these yet I can tell you that they are delicious. You can make them ahead and freeze them. These would be great to bake for fundraisers. I will be sharing the other bars that I baked for her party in the coming weeks.
1/4 cup brown sugar
1/4 cup butter
1/4 cup corn syrup
3/4 cup butterscotch chips, divided
2 cups rice crisps cereals
1 cup chocolate chips
1 tsp oil
1- In the microwave, melt brown sugar, butter and corn syrup in a large bowl.
2- Remove from microwave and stir in 1/2 cup butterscotch chips, stir until melted.
3- Add cereals and mix well. Press into a parchment lined 8x8 square pan.
4- Melt chocolate chips in microwave. Spread on top of bars.
5- In a small bowl melt remaining 1/4 cup butterscotch chips and oil. Drizzle on top of bars making lines. Place in refrigerator to chill for about one hour. Cut into bars. Adapted from Hershey's
