For as long as I can remember my mom favorite kind of sandwiches is Egg Salad Sandwiches. When my youngest son was born we prepared a buffet for our guests, and she offered to bring her macaroni salad and eggs sandwiches. We accepted the offer and, to my surprise, at the end of the night the sandwiches were all gone. She likes to use white bread but I do prefer whole wheat. My brother prefers his sandwiches with the crust off, we don't. I think it's a waste to cut the crust off the bread. We probably could start a debate about it.
The recipe for my egg salad uses simple ingredients. I like to mix mayonnaise and green onions to my eggs. My mom might add celery when she has some in her refrigerator. These sandwiches taste better if you prepare them couple hours before eating them. She told me that if you spread butter on you bread the sandwiches will be fresher. I experienced with and without and did not see the difference. What is the most important is a the bread that you are using. For these sandwiches I bought fresh 100% Whole Grain Wheat bread. This bread has no added fat or sugar. After eating one egg sandwich with this bread I feel full and satisfied.
EGG SALAD SANDWICHES
Whole Grain Wheat bread
4 large Hard-boiled eggs, peeled
4 green onions, diced
4 tablespoons mayonnaise
1/4 cup diced celery, optional
Salt and pepper, to taste
1- Mash the eggs with a fork.
2- In a medium bowl mix the eggs, green onions and mayonnaise. Add celery if using. Mix well. Add salt and pepper to taste.
3- Divide egg salad on 4 slices of bread. Top with the remaining 4 slices of bread.
4- Wrap well with saran wrap and place in refrigerator until ready to eat. You can add slices of cucumber and lettuce before serving.
Makes 4 sandwiches.
