All we hear about right now is students getting ready to go back to school. We walk into any store and they have nice, bright displays with school supplies and ready-to-eat snacks. I don't think my two sons are ready to go back just yet. They have been enjoying a nice summer, they go to bed after midnight and they get up late. It will be hard for them to go back to a normal schedule. We have been enjoying not having a set time for lunch or dinner. Most weeks there was no meal planning, I would decide at the last minute what we would eat that night. It's a good thing that the grocery store is only three minutes away from my home.
It's important for kids to eat breakfast before going to school, but it is as important to eat a complete lunch to be able to last all afternoon in class. Your mother always told you to eat your greens, and picky eaters don't always enjoy them. Did you know that eating your greens aids in boosting energy? They are also full of vitamins, minerals and antioxidants. Today I created a recipe that my sons will enjoy at school. Since I wanted lots of greens, I started by making my Arugula pesto. It takes 2 minutes to make and it's so good. Then I cooked some Maple Leaf Chicken Breasts in olive oil. I wanted more greens in my sandwich and added slices of cucumber, lettuce and fresh arugula. It's not only a beautiful sandwich to look at, it is also filling and so yummy!
454g Maple Leaf Prime Naturally Boneless Skinless Chicken Breasts
Club House Lemon & Pepper Seasoning, to taste
5 ml olive oil
1/2 cucumber, thinly sliced
1 cup fresh Arugula
4 lettuce leaves
4 Tbsp Arugula Pesto
4 Tbsp Light Cream Cheese
1- In a non-stick pan heat the olive oil. Add the chicken breasts and season with Club House Lemon & Pepper seasoning to taste. Cook until no longer pink inside and the juices run clear. (170 degrees F on an instant-read thermometer). Let rest at room temperature.
2- Cut the baguette into 4 pieces.
3- Spread one tablespoon of cream cheese and one tablespoon of arugula pesto on each baguette.
4- Divide the cucumbers on baguettes.
5- Cut the chicken breasts into 4 pieces. Place one piece of chicken on each baguette.
6- Top with lettuce and arugula. Enjoy!
