School has just started and the kids in my neighbourhood were all smiling when walking to the bus on Tuesday. Some parents are happy, but for others, they are not looking forward to those crazy, busy nights. Some are anxious about planning dinner and making sure they are ready to feed the family on time. It is a challenge to be creative in the kitchen. Some nights you just want to make something quick and easy. These Steak Fajitas might be the solution.
When we do fajitas nights, I like to put everything on the table and everyone can make their own wraps.
For my recipe I started by covering the beef top sirloin steak with a dry rub of chili and cumin. Then I cooked the steak into a bit of oil and deglazed my pan with lime juice and soya sauce. We like our fajitas with onions and peppers that are sautéed in a pan.

450g Beef Top Sirloin Steak
5 ml cumin
5 ml chili powder
15 ml oil
10 ml lime juice
5 ml soy sauce
4 Whole Wheat Tortillas
1 orange pepper, sliced
1 yellow pepper, sliced
1 onion, sliced
60 ml sour cream
60 ml fresh cilantro
1- In a small bowl mix the cumin with the chili powder. Cover the steak with the rub. Let stand at room temperature for 20 minutes.
2- Heat oil in a pan. Cook the steak until preferred temperature. Let rest 5 minutes then slice the steak into thin slices. Return the steak slices to the pan and deglaze with the lime juice and the soya sauce.
3- Meanwhile, in a non stick pan, heat the oil. Add the vegetables and sauté until slightly caramelized, stirring often. Remove from the heat.
4- Warm the tortillas in the microwave. Divide the steak slices, vegetables on top of each tortillas.
5- Serve with sour cream and fresh cilantro. Bon appétit!
