We love to snack during the day. In between meals we need something to give us energy to last a couple hours. Those bite-sized Energy Balls with Dates are not only delicious, they are also packed with nutrients. They taste much better than a snack bar that you buy at the store. They are easy to make, even your kids can make them. They like to roll these in coconut. When you start making your own snacks, you will stop buying the expensive packaged ones at the store.
To make the balls, I started by cooking the dates in a little bit of water. Dates are packed with a lot of essential nutrients, vitamins and minerals that help normal growth and development. For my balls I used protein powder, almonds, dark chocolate, oats, sunflower seeds, and almond milk. You could use different kinds of nuts like walnuts or pecans if you prefer. These balls are done in ten minutes and you should store them in the refrigerator.
Do you make your own energy balls?
1/2 cup dates
1/2 cup water
1/2 cup oats
3-4 tbsps protein powder
2 tbsps almonds, cut in small pieces
2 tbsps Dark Chocolate, cut in small pieces
2 tbsps Almond Breeze
1 tbsp sunflower seeds
Sweetened coconut flakes, optional
1- In a small saucepan bring dates and water to a boil. Reduce the heat and cook for 4 minutes.
2- In the meantime mix the oats, protein shake, almonds, sunflower seeds in a bowl with a fork.
3- Add the dates and almond breeze. Mix well with a fork. Add the dark chocolate. Using a small ice cream scoop make small balls. 4- Roll each balls into coconut flakes.
My son came back home late last night from refereeing hockey. He was hungry and tried one ball. He loved them a lot!
