Chicken Tikka Masala

On Thursday afternoons I volunteer at the Food Bank. I usually come back late and I am hungry. Yesterday I prepared a meal in the slow cooker before leaving. It was chicken in a wine and rosemary sauce with potatoes. Let me tell you that it smelled good in the house when I got back home. My sons each had a plate when they came back from college and university. This morning, to my surprise, there were some leftovers. 

This morning, I was working on different projects and only had few minutes to prepared lunch. I grabbed a package of Patak's Tikka Masala cooking sauce and made a Chicken Tikka Masala with potatoes and peas. I started by warming the rich sauce in a saucepan and added lime leaves, frozen peas and Panch Poran spices. While it was cooking, I added diced potatoes and shredded chicken to the pan. In ten minutes lunch was on table, it's so convenient. Don't we like it when we have a flavourful, comforting meal ready in less than fifteen minutes?




CHICKEN TIKKA MASALA

Ingredients:
1  Patak's Tikka Masala Sauce for 2
1 1/2 cup chicken, cooked and shredded
1 cup potatoes, cooked and cubed
1/4 cup frozen peas
1 tsp Panch Poran spices, optional
2 dried Lime leaves, optional

Directions:
1- In a non-stick heat the Patak's Tikka Masala sauce with the frozen peas, Panch Poran spices and lime leaves for 5 minutes.
2- Add the potatoes, chicken and cook another 4-5 minutes until warm.
3- Serve and enjoy!
