Tomorrow some of my in-laws are coming to visit us from Québec and we are excited to host them. Today was clean-up day and tomorrow morning I will bake and go grocery shopping for last minute items that need to be fresh. I will make a Beef and Beer Stew with mashed potatoes and glazed carrots. I am still not sure what I will be baking. It will probably be date squares and maybe a chocolate dessert. They are sleeping over and after breakfast we are going to visit my family in St-Hyacinthe. It will be busy the next two days.
My son just came back from refereeing at the arena and he was hungry. Dinner is not ready yet because we will eat late tonight. This week I bought the Limited Edition Dempster's Black Bean and Salsa Tortillas at the store. In no time I prepared Black Bean Quesadillas for my son. These are delicious served with a Mango Salsa, but you could also eat them simply with regular salsa.

BLACK BEAN QUESADILLAS
Dempster's Black Bean and Salsa Tortillas
1 cup Tex-Mex Cheese
1/2 cup black beans
1/2 cup salsa
1/2 cup mango, diced
1- Place one Black Bean and Salsa Tortilla in a medium pan.
2- Spread cheese and black beans on top of tortilla.
3- Top with one tortilla.
4- Cook on medium heat for 2-3 minutes per side until the cheese has melted.
5- In a small bowl mix the salsa with the mangoes.
6- When the tortillas are ready cut into 6 wedges. Serve with the salsa on top of each wedges. Enjoy!
