Roasted Potato Bites Appetizer

We love appetizers during the Holidays. These Roasted Potato Bites are crispy, creamy and delicious topped with tzatziki. I prepared them with the Little Potato Company Terrific Trio. I chose this mix because I love the three colors in the bag. This is the perfect appetizer fo any occasion. My son and I shared a plate and we fought for the last potato.

I roasted my potatoes in the oven in fresh lime juice, avocado zest oil, garlic and fresh rosemary. They were done in about 45 minutes. They are so easy to make and absolutely darling! You could bake them in the morning, keep them in the fridge until your guests arrive. Then warm them and add the topping at the last minute. We like tzatziki but you could add goat cheese or sour cream if your prefer.

ROASTED POTATO BITES

Ingredients:
1 bag 680g Terrific Trio The Little Potato Company
Juice of 1 lime
1/4 cup Olivado Avocado Zest oil
1/4 cup water
1 garlic clove, minced
Salt to taste
Sprigs of fresh Rosemary
Tzatziki for topping
Green onions, sliced

Directions:
1- Preheat oven to 350F.
2- In a baking pan mix the oil with water, lime juice and water. Cut the potatoes in half. Place in the pan. Top with fresh Rosemary. Salt the potatoes to taste.
3- Cook in the oven, at 350F for 35 to 45 minutes until the potatoes are cooked and tender.
4- Remove from the oven and let rest at room temperature for 10 minutes.
5- To serve place the potatoes on a place and top with tzatziki and green onions.


Recipe with Orange Juice: (really good also)
1 Tbsp fresh orange juice and zest
2 Tbsp Olivado Avocado Zest Oil
2 Tbsp water
1 garlic, minced
1 tsp oregano
salt, to taste

  12. Helene! these little potters are absolutely adorable. I've never roasted potatoes in citrus and you have my interest piqued - they look so good! I know what avocado oil is, but what's avocado zest oil? Details please!

    1. Thank you Kristy! It was my first time trying it and we actually like it a lot for a change. The avocado zest oil is made by Olivado and is extra virgin cold pressing of ripe avocados & fresh lemons.
