Easter is coming soon and if you want to impress your guests and not spend the day in the kitchen, make this delicious Chicken with Creamy Lemon Sauce. This is quick to prepare and so tasty. You can serve this chicken with oven roasted carrots and green beans. We liked the lemony flavor of this dish, it tastes like Spring. A chicken flavored rice will go very well with this meal.
For Easter long weekend we have decided to go to a cottage by a lake in Orford, QC. We will spend the weekend, only our family, and it will be nice to spend time together. We will probably go for long walks, play boards games, read and just relax by the fire.
I have a sweet tooth and like to have a bite of dessert after dinner. I might make my gluten-free brownies, they are decadent!
CHICKEN WITH CREAMY LEMON SAUCE
4 chicken breasts, no skin no bones
5 tsp Club House lemon and pepper seasoning
1/2 lemon, sliced thinly
4 large carrots, cut in length
1 tbsp olive oil
1 cup 35% cream
1 tbsp fresh lemon juice
zest of 1 lemon
1- Preheat oven to 350F. Top two small pans with parchment paper.
2- Place chicken breasts on one pan. Top the chicken with 4 teaspoons of Club House lemon and pepper seasoning. Place the lemon slices on top of the chicken.
3- Place the carrots on the other pan. Brush with olive oil. Sprinkle 1 teaspoon of Club House lemon and pepper seasoning.
4- Cook in the oven at 350F until the chicken reaches a safe internal temperature.
5- To make the lemon sauce, place the cream in a medium non-stick saucepan. Bring to a boil and reduce the heat to low. Cook for 6-7 minutes until the cream is thick. Remove from the heat and add the lemon juice, the lemon zest and 1/2 teaspoon of Club House lemon and pepper seasoning.
6- Serve the chicken with the creamy lemon sauce, the carrots and green beans or asparagus.
