My love affair with coffee started after I had my third child. Speaking of him, it is his birthday today and we will be celebrating tonight. When the other two where at school, we would go for a long walk in the afternoon. He was always excited to stop at a certain coffee place every once in a while. He always enjoyed this place because he could choose his own snack and could get a hot chocolate, as a special treat. I would always get coffee for myself. We would sit at a table, talk and enjoy every moment of it. It was our special time together before my two other kids would come back from school.
I am surprised that I did not start drinking coffee growing up because I come from a family of coffee drinkers. My dad likes it so much that even when he spends a couple nights at my place he makes sure he gets up first to brew us fresh coffee every morning. He had 14 brothers and sisters and I remember that when we were all together, it was very important for them to have dessert and coffee. At the time, I preferred having a glass of wine rather than coffee during these parties.
When I left home to join the military, I decided to give coffee a try when we were deployed in the field. I figured that it would help me stay awake, but the taste was terrible. I drank water instead. I don't know what kind of coffee or beans they used, but I could not drink that stuff even though others did.
Why I like coffee so much now is that over time, I created my own ritual of buying good beans and grinding them at home. I find that the smell is intoxicating, and I like my coffee in bone china cups.
During the summer we go camping a lot, and I always make sure to bring everything I need to prepare my coffee. This summer, I am so excited because I have received a beautiful Hamilton Beach Flex Brew Single-Serve Coffeemaker that I will be using in our RV. I have been making coffee with this coffeemaker and it works so well. What I like about it is that I can use my coffee beans and my husband can use his K-cups. It is also very quiet, so if he gets up before me, the noise will not wake me up. One of my favourite features is that I can choose bold setting, it's great because I love a very dark coffee. If I am on the go I can even fill my travel mug because it comes with an ajustable cup rest and I can brew 14 ozs. with ground coffee. When using single-serve packs, I am able to brew 10 ozs. How cool is that? I took pictures so you can see it in action below. I will have a great summer at the campground with my new coffeemaker. It makes me smile!
2 cups all-purpose flour
75 ml brown sugar
75 ml sugar
10 ml baking powder
2 ml salt
75 ml milk
125 ml butter, melted and cooled
2 eggs, beaten
5 ml almond extract
1 cup frozen fruits
30 ml butter, melted and cooled
30 ml all-purpose flour
30 ml brown sugar
125 ml oats
1- Preheat oven to 375F. Line 12 muffins cups with paper or spray with PAM.
2- In a large bowl, combine the flour, brown sugar, sugar, baking powder and salt.
3- In a small bowl combine the milk, butter, eggs and almond extract. Mix with a fork.
4- Add the wet ingredients to the dry ingredients and mix with a fork. Add the berries gently.
5- Scoop into the muffin cups.
6- In a small bowl mix all ingredients of the streusel topping. Divide on top of the 12 muffins.
7- Bake at 375F between 22 and 27 minutes until a toothpick inserted in the centre of a muffin comes out clean. Let cool before eating.
