Open-Face Huevos Rancheros

If there is one item that you will always find in my fridge, it's cheese. We like to add cheese to a lot of dishes and it enhances the flavour of our meals. We have tacos nights, quesadillas lunches, and why not eat cheese for breakfast like in these delicious Open-Face Huevos Rancheros? I made these twice since last week. It's a quick breakfast that keeps us full until lunchtime, and the eggs are creamy with a Touch of Philadelphia Shredded Cheese!

OPEN-FACE HUEVOS RANCHEROS

Ingredients:
1 Tbsp. oil
1 small onion, chopped
2 Tbsp. (about 1/2 of 35-g pkg. Old El Paso Taco Seasoning Mix
1 can (389 ml) no-salt-added black beans, rinsed
1/3 cup Old El Paso Thick N' Chunky Salsa
4 eggs, beaten
4 Old El Paso Medium Flour Tortillas, warmed
1 cup Touch of Philadelphia Shredded Creamy Mexicana Cheese
1/4 cup chopped fresh cilantro
