Cottage Cheese and Apple Butter Breakfast Recipe



This is a picture I snapped with my iPhone last week. It's one of my favorite breakfast foods now, and it's so healthy. Two weeks ago I made a delicious Apple Butter using Pure Infused Maple Syrup Vanilla, Cinnamon & Star Anise. The recipe is so quick to make and this maple syrup makes it more than delicious. I don't remember ever finding apple butter at the grocery store. Some people like to eat their apple butter on buttered toasts but I could simply eat the whole jar with a spoon!

On a recent trip to Costco I found individual packages of pomegranate seeds. It's so convenient because cleaning pomegranates can get a little messy. For my breakfast, I also bought the new Gay Lea Nordica Smooth cottage cheese, vanilla bean flavor. It's creamy and has the texture of greek yogurt. If you don't like regular cottage cheese, try this one, I'm sure that you will enjoy it.

COTTAGE CHEESE AND APPLE BUTTER BREAKFAST

Ingredients:
cottage cheese
banana
pomegranate seeds
apple butter or maple syrup (recipe to come)

Directions:
1- Spoon cottage cheese into a bowl.
2- Top with slices of bananas, pomegranate seeds and apple butter.

Enjoy!
