Roasted Potatoes

Happy Easter!

We made a Greek Dinner tonight. We had greek salad, souvlakis, tsatziki and roasted potatoes. When I saw this recipe at Elise's blog I knew I had to make it. I've been making them couple times now and my family rave about them. So I had to share the recipe with you.

I hope the Easter bunny was good to you.


  • 1 1/2 pounds of smallish new potatoes (red or yellow skinned), cleaned, cut in half or quarters
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1-2 teaspoons fresh rosemary, minced
  • 1/4 teaspoon Kosher salt
  • Freshly ground black pepper to taste
