Chewy Chocolate Fudge Pie

Easter is coming this week-end and if you are still looking for a dessert this Chewy Chocolate Fudge Pie is so easy to prepare and yummy. After receiving coupons from Tenderflake I went to the store and got a box of Deep Dish Pie Shells. The box comes with 2 pie shells. You can use one for this recipe and keep the other one in the freezer for later. If you are looking for a dessert to make with your kids this is a very easy one to make and they will like the final result. Using the crust will save you a lot of time. Serve this dessert at Easter with ice cream on top and a berry sauce on the side. You could also use the mini tart shells to make this dessert.

Chewy Chocolate Fudge Pie

1 1/2 cups semi-sweet chocolate chips, divided
1/3 cup Lactancia Salted Butter
3/4 cup granulated sugar
2 tsp vanilla extract
2 Naturegg Omega 3 Eggs
1/4 tsp salt
1/2 cup all-purpose flour
1/2 cup chopped toasted walnuts (optional)
1 Tenderflake Deep Dish Pie Shell, thawed
Vanilla ice cream (optional)
Berry Cherry Sauce (optional)

1. Preheat oven to 350°F (180°C). 

2. Melt 1 cup chocolate chips with butter in a medium saucepan set over medium-low heat. Remove from heat; cool for 5 minutes. Whisk in sugar and vanilla. Whisk in eggs, one at a time, until fully incorporated; add salt. Stir in flour until no dry streaks remain. Stir in remaining chocolate chips and walnuts (if using). 

3. Scrape batter into pie shell and smooth top. Bake, on lowest rack, for 35 minutes or until a toothpick inserted into the centre comes out slightly moist. Serve warm with ice cream and Berry Cherry Sauce (recipe below). Makes 8 servings. 

Berry Cherry Sauce: Stir 2 cups Europe's Best® Fruit Essentials™ Berry Cherry Medley with 1/3 cup granulated sugar and 2 tbsp cornstarch in a saucepan. Set over medium heat and cook, stirring often, until thickened and glossy.
