Meatloaf with Bacon recipe

The Canadian Harvest is the theme for The Canadian Food Experience Project this month. I searched on the Foodland Ontario website and found out that in November apples, carrots and parsnips are are available fresh. I decided to plan a meal using them.

My meals was meatloaf with bacon served with garlic mashed potatoes and oven roasted vegetables. It turned out to be very good. The meatloaf is different from the recipe my mom was making at home, this one is made with pork and fresh apples which makes it very moist. We enjoyed this meal and will make this meatloaf again.


500g Canadian Ground Pork
2 large McIntosh Apples, peeled and grated
125 ml Panko
2 garlic gloves, minced
10 ml Chili Powder
4 ml dry Mustard
4 ml Worcestershire Sauce
7 to 12 slices Maple flavored Bacon
30 ml Apricot Jam
Salt and Pepper to taste

Preheat oven to 350F.

Line a baking sheet with parchment paper.

In a bowl, combine the meat, apples, panko, garlic, spices and Worcestershire sauce. Mix well with your hands. Add salt and pepper to taste.

Shape into a 8x4 inches loaf on the baking sheet. Cover with sliced on bacon, placing them on top of the meatloaf, side by side.

Bake for about 1:15 minutes. With a meat thermometer it should read 180F.

Remove from the oven and brush the Apricot Jam on top of the bacon. Let rest 5 minutes and serve with garlic mashed potatoes and oven-roasted vegetables.
