Greek Salad Wraps

It does not feel like Spring in Ontario with all the snow on the ground. Since last Friday I left winter behind and flew to Florida for a week. It is nice to have sunny warm days for a change. We are enjoying long walks on the beach. Tomorrow we are leaving all of this behind us. I will miss this weather and I am not looking forward to go back to Ottawa.

Before leaving for vacation I made these refreshing Greek Salad Tortillas wraps.  They are easy, delicious and fast to fix. If you want to bring wraps to work, you should place the filling in a container and wrap your tortillas at the last minute. That way they will not get soggy. For my Greek Salad Wraps recipe I am using 100% Whole Wheat Tortillas. They taste delicious and you can make so many recipe with tortillas like chicken ceasar wraps, hummus with veggies. They are not only good for Mexican nights but also for breakfast, try making breakfast burritos.


2 100% Whole Wheat Tortillas, 7in.
1 tomato, diced
1/2 english cucumber, diced
3 green onions, sliced
1/4 cup feta, diced
2 tbsps Olive oil
2 tsp Red Wine vinegar
1/2 tsp dried oregano
Salt and pepper to taste

1- Place all ingredients, except tortillas and lettuce, in a medium bowl. Mix well.
2- Divide mix in each tortillas. Add lettuce. Wrap and eat!
