Ground Chicken Sloppy Joes

In February I had the chance to visit Paris for 8 days. It was nice to finally escape our cold days. The weather in Paris was between 3C and 10C. It was the perfect weather to visit the city on foot. We did walk a lot all around town. We rented an apartment, by Trocadéro, and at night I cooked delicious meals. We needed this time to relax and unwind before going to bed.

When it is that cold outside I like to spend more time in the kitchen. For our daily meals I cook warm winter meals like soups, stews, pastas. We satisfy our appetite with comfort dishes and it is a bonus when I make a recipe that I can freeze, like these Sloppy Joes. You can make this recipe ahead, freeze it, and when you come home you can prepare your meal in few minutes. 


454g Extra Lean Ground Chicken
1 Tbsp Olive Oil
2 small onions, diced
3 cloves garlic, minced
75 ml Chili Sauce
150 ml water
30 ml tomato paste
15 ml vinegar
10 ml chili powder
5 ml worcestershire sauce
5 ml steak spices
dash Allspice
Salt and pepper to taste
6 small buns
125 ml cheddar cheese
kale or lettuce, optional

-In a large non-stick pan heat olive oil. Add ground chicken and onions and cook 10 minutes until no longer pink.
-Add remaining ingredients, mix well. Bring to a boil. Turn the heat to low, cover and cook for 30 minutes.
-To serve, split the buns in half.
-If using kale or lettuce, place on buns.
-Divide the Sloppy Joe mix equally on top of kale or lettuce.
-Top with the cheddar cheese. 
-You can warm the buns for a few minutes in the oven if you like hot buns.
