We have sports fans in the house. My husband and my son don't miss a Montreal Canadiens game. They love to watch any sport on TV, but hockey is their favorite. They both played and they share the same passion for the sport. If we are going away for the night, my husband will make sure he records the game before we go, that's how passionate he is about it. We're so excited that the Habs won last night! 

On game nights, Chicken Nachos are a great recipe to make for sports fans. For my recipe I am using Thin Sliced Chicken Breasts. I like the fact that these chicken breasts are already thinly sliced because they cook faster. To make the chicken I marinate it in lime juice, garlic, chili powder, oregano and cilantro for a couple hours, the longer the better. You can prepare the chicken in the morning before going to work, and let it marinate all day.

The chicken can be cooked on the BBQ, the oven or in a pan. In the summer nothing beats the BBQ flavour. Once the chicken is fully cooked you can prepare the nachos. I like to serve these nachos with a sour cream Creama, and lots of fresh vegetables like tomatoes, green onions, green pepper and jalapeños. A plate of these Chicken Nachos doesn't last long in my house!

Chicken Nachos


Ingredients for Nachos:
450g Thin Sliced Chicken Breasts
Juice of 2 limes
3 cloves of garlic, minced
5 ml chili powder
5 ml oregano
1 bag Tex Mex Shredded Cheese
1 bag Tortilla chips
jalapeño, diced
green pepper, diced
tomatoes, diced
green onions, diced

250 ml sour cream
250 ml fresh cilantro
1 green onion, diced
1/2 jalapeño, diced
1 tbsp fresh lime juice

1- In a plastic bag mix the lime juice with garlic, chili powder and oregano. Add the chicken. Marinate at least 2 hours.
2- Preheat the oven to 350F. Place the chicken on a cookie sheet covered with foil. Bake until chicken is cooked. Remove from the oven and slice the chicken.
3- On a large cookie sheet place a piece of parchemin paper. Spread the Tortilla Chips on the cookie sheet. Top with 1-2 cups of shredded cheese. Place the pieces of chicken on top.
4- Broil in the oven until the cheese has melted, about 2-3 minutes.
5- To prepare the Creama: mix the sour cream, fresh cilantro, green onion, jalapeños and fresh lime juice in a blender. Blend for about 30 seconds until the vegetables are shredded. Set aside.
6- When the cheese had melted, removed from the oven. Top with jalapeños, green peppers, tomatoes and green onions.
7- Serve with the Creama and salsa. Enjoy!
