Cookie Ice Cream Sandwiches

Since I made these ice cream sandwiches, last week, I wanted to try a new recipe. Making your own is fun and they are so much better than if you buy them at the store. For this new recipe I am using Green & Black's Organic Burnt Toffee Dark Chocolate. This chocolate is so good on it's own. I have been snacking on this chocolate, after lunch, last week. 

To make these Cookie Ice Cream Sandwiches start by making a fresh batch of cookies. If you are in a hurry to eat these sandwiches, scoop ice cream in between two cookies and enjoy. I usually let them cool at room temperature before I make them. You can try any ice cream that you like. I like French Vanilla or chocolate. 

Cookie Ice Cream Sandwiches - La Cuisine d'Hélène


100g Green & Black's Organic Burnt Toffee Dark Chocolate
250 ml all-purpose flour
125 ml butter, at room temperature
125 ml sugar
60 ml brown sugar
5 ml vanilla extract
1 egg
2.5 ml baking soda
1 ml salt
Vanilla Ice Cream

1- Preheat oven to 350F.
2- Place butter, brown sugar and sugar in the bowl of the KitchenAid. Cream for 2-3 minutes.
4- Add the egg and vanilla extract and mix for 30 seconds.
5- Add the flour, baking soda and salt. Mix for another 2 minutes.
6- Cut the chocolate in small pieces. Add to the cookie mixture. Mix for 30 seconds.
7- Drop balls of dough on a cookie sheet and bake 11 minutes. Remove from the cookie sheet and let cool at room temperature.
8- To make the ice cream sandwiches place 125 ml of vanille ice cream between two cookies. Place in the freezer until ready to eat.

Makes: 10 ice cream sandwiches.
