I like to clean up my fridge once a week. You never know what you will find behind your juice or your milk. Then I make a big salad. I call it: Dump Salad. You simply dump everything that you find in the fridge in a bowl.  For this healthy salad, I had kale, lettuce, fennel, cucumber, green onions and mangoes in the fridge that needed to be eaten right away. On top I added sesame seeds and pumpkin seeds for some crunchiness and them dumped on top dried cranberries to add sweetness to my salad. If you make my Dijon Maple Syrup Vinaigrette you will have a delicious meal.

DIJON MAPLE SYRUP VINAIGRETTE

Ingredients:
4 Tbsp Olive Oil
4 tsp Cider Vinegar
1 Tbsp Maple Syrup
1/2 tsp Dijon Mustard
1 garlic clove, minced
1/8 tsp salt

Directions:
Place all ingredients in a Mason Jar. Shake well. Keep in refrigerator for up to one week. Enjoy!
