Quick Taco Salad Recipe

Taco Salad

Last week my son ask me if I could plan to make a salad for Dinner in the upcoming weeks. I looked on the Kraft Canada website for inspiration and found different recipes for salads. Since it was hot yesterday, and we love Mexican food, the salad of choice was to make this Quick Taco Salad. This is healthier than tacos and so tasty. You can adapt the recipe by using black beans, instead of ground beef, for a vegetarian version.
To prepare the salad you simply brown the meat with onions and add taco seasoning mix. You could make your own, if you wish. That way you can control the spiciness of the dish. If you choose to use black beans, you can warm them, add a bit of chili powder and cumin to add taste to your beans. Once your meat is ready place the vegetables on a nice plate, top with tomatoes, cheese and dressing. Add meat or beans and chips. Mix and serve. If you like heat, add sliced jalapeños. We enjoyed this quick and easy dinner recipe and it will become a favorite weeknight meal.

450g extra-lean ground beef
1 onion, chopped
1 pkg. (35g) taco seasoning mix
1 cup water
1 large head romaine lettuce, coarsely chopped
2 tomatoes, chopped
1 cup Tex Mex Shredded Cheese
1/4 cup Calorie-Wise Rancher's Choice Dressing
2 cups tortilla chips (110 g), coarsely crushed
