The past couple days we have been camping. We love to be in the woods at this time of the year. We decided to visit a Sépaq in Québec. It's a network of national parks, wildlife reserves and tourist resorts. The Plaisance National Park is only one hour away from home along the Ottawa River. You can see Canada Geese, ducks, herons, ospreys and other species. We camped during the week and it was so quiet. We took long walks in the woods and enjoyed a campfires at night. We love being outdoors and relaxing. When we go camping I like to make food ahead of time and when it's time for dinner we only have to reheat our meal. During our stay we enjoyed a nice lentil soup and a Sausage and Fennel pasta.

This Beef and Beer Stew is also a great meal for camping. It's robust and flavours develop when you make it one day before eating. I have made it several times, my family loves it and the beef is very tender. You can cut it with a fork. You can use any kind of beer and this time I used the Hockley Dark beer that I bought at the LCBO.

1.75 lb Stewing beef, cubed
1 Tbsp butter
1 Tbsp oil
1 oignon, diced
2 cups beef broth
2 Tbsp brown sugar
250 ml Hockley Dark Beer
3 whole cloves
2.5 ml Chinese Five-Spice Powder
2.5 ml salt
3/4 tsp instant coffee

1- Preheat ovent to 350F.
2- In Le Creuset or Dutch Oven melt butter and oil over medium heat. Brown the meat. Add the onions and sauté 2-3 minutes
3- Add remaining ingredients and bring to a boil.
4- Cover and place in the oven.
5- Cook for 3-4 hours.
