Chicken Greek Salad Recipe - La Cuisine d'Helene

We are having a wonderful trip in Asia. My first stop was to go back to Hong Kong for couple days. I had the chance to visit Big Buddha this time. In 2012 I ran out of time when I visited this city. After Hong Kong I flew to Brunei to meet my husband. He is working there for the moment. It's a small country. I stayed for 2 nights. In Kuala Belait I had a delicious vegetarian Indian meal. I don't think I will ever go back to Brunei but I am glad that I had the chance to visit it. Then we flew to Bali for four nights and we are now in Singapore. When I return home I will post pictures of my trip. Tomorrow we are flying to Shanghai. I can't wait to go. I have been sick, with the stomach flu, here in Singapore, after I had a meal in a reputable restaurant. I am feeling a bit better today but I am missing my homemade meals from home.

I wish I could eat this delicious healthy Chicken Greek Salad that I made before leaving for my holiday. This is the perfect meal to make when you need a break from the holiday indulgence. I added chicken and greek potatoes to this salad to make it a bit more substantial.


2 Chicken Breast, Maple Leaf Prime Naturally Butterflied 
1/4 cup olive oil
2 tbsp fresh lemon juice
2 garlic cloves, minced
4 fresh rosemary sprigs
salt and pepper to taste

Lettuce, shredded
1/2 cup greek potatoes, diced
1/2 cucumber, diced
1/2 cup feta cheese
1/2 tomato, sliced
2 tbsp red onions, minced
2 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, minced
1/2 tsp dried oregano
salt and pepper to taste

1- In a bowl mix the oil, lemon juice, garlic and chicken. Marinate the chicken breasts for 1 hour.
2- Place chicken on a pan and place the fresh rosemary sprigs on top. Add salt and pepper to taste. Cook in the oven at 350F until the chicken has reached a safe temperature. Set aside.
3- In a big bowl mix the olive oil, lemon juice, garlic, dried oregano, salt and pepper.
4- Add the lettuce, cucumber, tomato and red onions. Mix well.
5- Divide into two plates.
6- Cut the chicken into slices. Divide the greek potatoes, chicken and feta cheese into the two plates.
