Banana Chocolate Mousse

If you love chocolate as much as I do you have to make this Banana Chocolate Mousse. This creamy, simple recipe does not have eggs. It is safe to serve to your pregnant friends and young children. The secret is to add chia seeds but don't tell them. When I came home yesterday I made this recipe in two minutes. I tried a spoonful right away and it was so good. It is best to cool the mousse in the refrigerator, for couple hours before serving, but I did not want to wait that long.

The quality of the chocolate that you are using in this recipe is very important. I am a big fan of organic chocolate . I love dark but also sea salt, toffee and ginger and almond. In the middle on the afternoon I love a piece of chocolate with tea. If you love green tea you could pair it with Almond or Milk chocolate. For herbal tea lovers dark chocolate is a great match. I love Rooibos tea at night and Maya Gold Chocolate is very good with this kind of tea.

1 x 100g Organic 70% Dark Chocolate 
1 cup Almond Breeze
3 tbsp Chia Seeds
2 bananas, ripe and mashed
1 tsp cinnamon
1/4 tsp salt (optional)

1- Break the chocolate in small pieces in a bowl that is microwave safe.
2- Add the Almond Breeze.
3- Melt the chocolate on medium-high. Start with 60 seconds and mix well. If not all pieces are melted, add 20 seconds at a time.
4- Add the Chia Seeds, bananas, cinnamon and salt.
5- Divide into small Mason Jars. Place in the fridge for at least 2 hours. 

Serve 4 to 6.
